Cassava root is a ubiquitous root vegetable throughout the Caribbean and Latin Americas originating from Brazil. This Jamaican recipe fries them like potato chips and puts a delightful twist on an old favorite. They were a big hit at Jamaican picnic.
Peel and slice the cassava root and soak in ice water for 30 minutes. Drain and dry. Fry until crisp and browned and the sprinkle with salt.
