Sopa de Tortilla | Tortilla Soup

Simple to make and yet impossible to resist. This fresh, crispy comfort food soup is a great starter to the whet the appetite.


6 x stale 4inch tortillas
1/2 cup salad oil
8 cups chicken stock
1 onion, minced
1/2 cup tomato paste
1 tbsp coriander, chopped
Parmesan cheese
1 avocado, sliced


  1. Cut the tortilla into strips and deep fry until crisp
  2. Bring stock and onions to a boil and then simmer until onion is tender
  3. Add tomato paste and simmer for 5 minutes and then add coriander
  4. Place a handful of fried tortilla strips in each bowl and ladle hot soup on top
  5. Garnish with parmesan and avocado
