
Although this recipe is a fairly straight forward roast chicken recipe, I decided to include it on the blog because it highlights how this very familiar recipe can fit within a Polish dinner party. What makes this recipe Polish? Dill stuffing of course. What else? Sounds simple but it is delicious and effective and acts as a perfect centre piece for some of the Polish side dishes I’ve covered on the blog.

Ingredients
1 chicken
1 cup bread crumbs
2 tbsp dill, chopped
2 tbsp parsely, chopped
1 cup butter
Directions
- Preheat oven to 425 degrees.
- Combine bread crumbs, dill, parsley and 1/2 cup of butter. Season with salt and pepper.
- Stuff the chicken with the filling.
- Top the chicken with the rest of the butter and heavily season with salt and pepper.
- Roast for 1 & 1/2 hours.
