Pineapple juice is a staple of any Tiki bar and so I knew that I wanted to feature a pineapple based drink in my review of Beachbum Berry’s Grog Log. There is something about this drink that always hits home for me, I couldn’t rightly tell you why. Sometimes when the chemistry is just right in a drink everything just clicks. This is definitely not a complex drink to make but, for me, the balance of flavor and strength is perfect. Pineapple juice creates a beautiful froth when shaken that approximates the froth of egg whites and gives this cocktail a creamy head.
One of the even more obscure cocktails from the Grog Log, this cocktail hails from a 1940s advertising brochure from the Carioca Rum Company. Originally from Puerto Rico, the Carioca Rum brand continues to this day but hailing from Toronto, Canada of all places. The new bottles offers a tantalizing blend of ‘Caribbean’ and Canadian rums, whatever that means.
Regardless, this cocktail is one of my go to’s for a quick Tiki treat.
1/2 oz lime juice
1 oz pineapple juice
1 tsp simple syrup
1 1/2 oz white rum (Puerto Rican)
Dash of Angostura Bitters
- Vigorously shake with ice. Strain into a glass filled with ice.
