Colonel Beach’s Plantation Punch from Beachbum Berry’s Tiki retrospective Grog Log (1998). This late era concoction by Donn Beach dates back to his Waikiki years in the 1950s. It is also one of the few carbonated cocktails I have chosen to highlight from the Grog Log, utilizing the spicy Jamaican ginger beer.
I am a huge fan of ginger beer, but I often find that cocktails that try to incorporate it tend to become overly sweet. I am not saying this one isn’t sweet, because it sure as hell is, but the bright acidity from the lime and pineapple juice creates a counter balance to the ginger beer’s cloying sweetness. Combined with Donn Beach’s signature secrete mix of Pernod and Angostura along with a healthy dash of falernum and you’ve got yourself a rather beguiling drink.
1 oz lime juice
2 oz pineapple juice
2 oz Jamaican ginger beer
2 oz dark rum (Jamaican)
1 oz gold rum (Puerto Rican)
1/2 oz gold rum (Barbados)
1/2 oz falernum
Dash of Angostura Bitters
1/8 tsp Pernod
- Except for the ginger beer, shake all ingredients vigorously with ice in a cocktail shaker.
- Add ginger beer into the shaker and stir.
- Strain into a glass filled with ice. Garnish with pineapple and mint if desired.
