Mr. Bali Hai

‘Mr. Bali Hai’ is the specialty cocktail of the San Diego Bali Hai restaurant which serves them in their signature Mr. Bali Hai glass, a kind of ‘sad-eyed cannibal’ as Jeff Berry describes it. I’m not normally a fan of coffee flavoured cocktails but this one nails the proportions just right. Plus the pineapple juice creates a wonderful head that almost approximates drinking a stout beer like Guinness.

Ingredients

1 1/2 oz pineapple juice
1 oz lemon juice
1/2 oz simple syrup
3/4 oz coffee liqueur
1 oz light rum (Puerto Rican)
1 1/2 oz dark rum (Jamaican)

Directions

  1. Shake vigorously with ice and pour unstrained into a glass.
