Beef Tacos

Perhaps the defining the classic of the Tex-Mex genre, the beef taco. These beef tacos from Senor Pico’s have a traditional flavour profile while still retaining a level of elevation and uniqueness that makes them a worthy addition to anyones treasure chest of Tex-Mex recipes. Partially, that is due to the addition of Mexican chorizo mixed into the ground beef mixture but even more importantly it is due to the homemade red enchilada sauce. Frying your own tortillas to make the semi-hard taco shell is a nice addition and it all comes together as a satisfying package.


2 Mexican chorizo
1 onion chopped
3 tbsp vegetable oil
1 lb ground beef
1 tsp Mexican chili powder
2 tbsp vinegar
1 tsp salt
1/4 tsp pepper
2 cups Senor Pico Red Enchilada Sauce


Saute the onion in oil and then add the de-cased chorizo and beef. Once cooked, integrate spices and seasonings and then finish with the enchilada sauce.

Next, gently fry tortilla shells in oil until golden but pliable. Fold over into a half moon and fry a little longer until firm.
