Mexican Rice

No matter what recipe you decide to try from Senor Pico’s it is a must that you accompany it with this recipe for Mexican-style rice. This flavourful rich rice is easy to make and elevates any Tex-Mex dinner to that level of yum that everyone will enjoy.


2 cups of good quality white rice (I like Basmati)
1/4 cup butter
1/2 finely chopped onions
1 clove of garlic minced
1/2 green pepper chopped
1 small can of tomato sauce
3 cups chicken stock
1 tsp salt
1/4 tsp pepper

Cook the butter and rice together until the rice is somewhat translucent. Add onion, garlic, green pepper and cook down the vegetables. Stir in the tomato sauce until the rice is completely coated and then add the stock. Bring to a boil and then reduce heat to low, cover and cook for 20 minutes.
