
To accompany the rich, heavy menu at Senor Pico’s Victor Bergeron offers these two fresh tomato sides to lighten things up. They are actually both quite similar to one another but I tend to favour the salsa recipe of the tomato table sauce. You be the judge.
Salsa
Ingredients
2 Tomatoes chopped
3 canned California chilies chopped (canned green chilies Anaheim or Poblano)
1 large onion finely chopped
1 tbsp chopped coriander
1 tsp minced garlic
1 tsp salt
1/2 tsp pepper
Juice of 1 lemon
Tomato Table Sauce
Ingredients
10 small fresh green chilies chopped
1 onion chopped
2 cloves of garlic minced
1 tbsp coriander chopped
10 tomatoes peeled and chopped
2 tbsp vinegar
2 tbsp olive oil
1/2 tsp Tobasco
Salt to taste
