Chicken Enchiladas from the Senor Pico Tex-Mex Restaurant circa 1960s

I’ve always been a sucker for enchiladas. These enchiladas from Victor Bergeron’s (aka Trader Vic) Senor Pico Tex-Mex restaurant are a perfectly hearty comfort food, elevated by a homemade red enchilada sauce.


2 cups cooked chicken chopped
1 small onion finely chopped
4 olives finely chopped
1 cup Senor Pico red enchilada sauce
1 tsp salt
1 cup grated Cheddar
6 flour tortillas


Saute onions in vegetable oil until cooked and then mix all ingredients together, reserving 1/2 cup of enchilada sauce. Gently fry tortillas in oil until golden but pliable. Divide filling between tortillas and wrap. Bake in 350 degree oven until hot. Top with the rest of the enchilada sauce and more grated cheese.
