Polish Style Roast Chicken

Although this recipe is a fairly straight forward roast chicken recipe, I decided to include it on the blog because it highlights how this very familiar recipe can fit within a Polish dinner party. What makes this recipe Polish? Dill stuffing of course. What else? Sounds simple but it is delicious and effective and acts as a perfect centre piece for some of the Polish side dishes I’ve covered on the blog.


1 chicken
1 cup bread crumbs
2 tbsp dill, chopped
2 tbsp parsely, chopped
1 cup butter


  1. Preheat oven to 425 degrees.
  2. Combine bread crumbs, dill, parsley and 1/2 cup of butter. Season with salt and pepper.
  3. Stuff the chicken with the filling.
  4. Top the chicken with the rest of the butter and heavily season with salt and pepper.
  5. Roast for 1 & 1/2 hours.
