This is a new addition to the Grog Log (remixed edition) taken from the 2001 publication Hawaii Tropical Drinks & Cuisine by Don the Beachcomber which posthumously published Donn Beach’s recipes in cooperation with his widow Phoebe Beach. Jeff Berry postulates that this recipe is a late era concoction by Donn Beach during his Waikiki years post 1948 with a potential origin date as late as the 1980s.
Passion fruit is a recurring figure in the rogues gallery of Tiki flavours but it can often be overwhelming. I enjoy this recipe because it highlights passion fruit as the star while the addition of honey and (critically) the double dash of Angostura provides a more complex mouth feel. Pro tip: make sure to get a high quality passion fruit juice for the best results.
1 oz white rum (Puerto Rican)
1/2 oz gold rum (Jamaican)
1/3 oz lime juice
3/4 oz passion fruit juice
1/2 oz honey syrup (1:1 ratio honey & water)
2 dashes Angostura bitters
Shake with ice and strain into a glass with ice.
